  • 8 oz feta cheese, crumbled
  • 8 oz cream cheese, softened
  • 1 cup sour cream (full-fat)
  • 3 large eggs (room temperature)
  • 1/4 cup honey
  • 2 tbsp extra-virgin olive oil
  • 1 cup savory crackers or biscuits, crushed (for the crust)
  • 1/4 cup unsalted butter, melted (for the crust)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. For the crust, blend crushed crackers in a food processor until fine crumbs form. Mix in melted butter and press into the bottom of a springform pan.
  3. In a large bowl, beat crumbled feta, cream cheese, sour cream, and honey until smooth.
  4. Add eggs one at a time while mixing on low speed until fully incorporated.
  5. Pour filling over the prepared crust and smooth it out. Bake for about 40 minutes until slightly set but still wobbly in the center.
  6. Turn off the oven and let the cheesecake cool inside with the door ajar for one hour to prevent cracking.
