  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup melted butter (or vegetable oil)
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Grate the zucchini and squeeze out excess moisture.
  3. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, mix granulated sugar, brown sugar, eggs, vanilla extract, and melted butter until smooth. Fold in the grated zucchini.
