  • 4 cups fresh spinach, packed
  • 6 slices thick-cut bacon
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 cloves garlic, minced
  • 1 medium sweet onion, diced
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the bacon until crispy. Drain on paper towels.
  3. In the same skillet with some bacon grease, sauté the diced onion and minced garlic until fragrant.
  4. Add spinach by the handful and stir until wilted (about 3-4 minutes).
  5. Pour in heavy cream and season with salt and pepper. Stir until bubbly (about 5 minutes).
  6. Remove from heat, mix in cheddar cheese until melted, then fold in crumbled bacon (reserve some for garnish).
  7. Transfer mixture to a greased baking dish and top with panko breadcrumbs and remaining bacon.
