- 8 oz rotini or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced

- 1 cup shredded cheddar or mozzarella cheese
- ½ cup mayonnaise

- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp Italian seasoning

Instructions
- Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and let cool.
- While the pasta cooks, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
