Ingredients

  • 8 oz rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red onion, chopped
  • 1 cup shredded cheddar or mozzarella cheese
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente (8-10 minutes). Drain and let cool.
  2. While the pasta cooks, chop the cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  3. In a mixing bowl, combine mayonnaise, sour cream, lemon juice, olive oil, Italian seasoning, salt, and pepper. Whisk until smooth.
  4. In a large bowl, mix cooled pasta with chopped veggies and shredded cheese. Pour the dressing over and toss gently to combine.
  5. Cover and chill in the refrigerator for at least one hour before serving.
