Ingredients
Scale
- 4 bone-in chicken thighs (about 1.5 lbs)
- 8 oz fresh cremini mushrooms, sliced
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tsp fresh thyme (or 1 tsp dried thyme)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C). Heat a large oven-safe skillet over medium-high heat.
- Season chicken thighs with salt and pepper. Add olive oil to the skillet and sear chicken skin-side down until golden brown (about 5-7 minutes). Flip and cook for an additional few minutes, then transfer to a plate.
- In the same skillet, sauté mushrooms and garlic until soft (4-5 minutes).
- Pour in chicken broth and bring to a simmer. Stir in heavy cream and thyme, allowing the sauce to thicken slightly (about 5 minutes).
- Return chicken thighs to the skillet skin-side up, spooning sauce over them. Bake in the oven for 25-30 minutes until cooked through.
- Serve hot with extra sauce over rice or pasta.
