  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium sweet onion, diced
  • 4 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 8 oz cream cheese
  • Tortilla chips for garnish
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 2 tbsp fresh lime juice
  • Fresh cilantro (optional)

Instructions

  1. 1. Dice the onion and mince the garlic.
  2. 2. In a large pot over medium heat, sauté the onion in olive oil until translucent. Add garlic and cook until golden.
  3. 3. Add chicken breasts, chicken broth, and canned tomatoes. Bring to a simmer.
