  • 1.5 lbs boneless, skinless chicken breasts (about 3 breasts)
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese
  • Tortilla chips for serving

Instructions

  1. Chop onion, bell peppers, and garlic into small pieces.
  2. In a large pot over medium heat, add 1 tbsp olive oil. Sauté onion and garlic until fragrant (about 2 minutes), then add bell peppers.
  3. Add chicken breasts and canned tomatoes to the pot. Pour in chicken broth until it covers everything by an inch. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove chicken, shred it with forks, and return to the pot along with cream cheese. Stir until creamy.
  5. Taste and adjust seasoning with salt and pepper if needed. Simmer for another 5 minutes.
  6. Serve hot topped with tortilla chips.
