- 3 cloves garlic, minced
- 1 medium onion, diced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes with green chilies
- 4 cups low-sodium chicken broth
- 8 oz cream cheese
- Tortilla chips for serving
Instructions
- Chop onion, bell peppers, and garlic into small pieces.
- In a large pot over medium heat, add 1 tbsp olive oil. Sauté onion and garlic until fragrant (about 2 minutes), then add bell peppers.
