  • 4 bell peppers (any color)
  • 3 cups cooked chicken, diced
  • 2 cups fresh spinach
  • 1 cup cooked rice
  • 8 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove seeds. Arrange them upright in the baking dish.
  3. In a skillet over medium heat, cook diced chicken until golden brown (5-7 minutes). Season with salt and pepper.
  4. In a large bowl, mix cooked chicken, fresh spinach, rice, cream cheese, garlic powder, Parmesan cheese, salt, and pepper.
  5. Stuff each bell pepper with the filling mixture until overflowing.
  6. Drizzle olive oil over stuffed peppers, cover with foil, and bake for 25-30 minutes. Remove foil for the last few minutes to achieve a golden top.
