  • 1 cup brown sugar (light)
  • ½ cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup dried cranberries
  • 1 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a medium bowl, melt the butter until bubbly, then let it cool slightly. Mix in the brown and granulated sugars until combined.
  3. Add eggs one at a time, whisking until smooth. Stir in vanilla extract.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually fold into the wet ingredients until just combined.
  5. Fold in cranberries and white chocolate chips. Pour the batter into the prepared pan and spread evenly.
  6. Bake for 25–30 minutes until golden brown on top; a toothpick should come out clean or with a few gooey bits from chocolate.
  7. Allow to cool before cutting into squares.
