  • 2 cups fresh cranberries
  • 1 cup all-purpose flour
  • 1 cup rolled oats (old-fashioned)
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter, cold
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a saucepan, combine cranberries, 1/4 cup brown sugar, lemon zest, and salt. Cook over medium heat until cranberries burst (about 5-7 minutes).
  3. In a bowl, mix flour, oats, remaining brown sugar, baking powder, and salt. Cut in cold butter until crumbly.
  4. Press half of the mixture into the pan, pour cranberry filling on top, then sprinkle the remaining crumble mixture.
  5. Bake for 30-35 minutes until golden brown. Cool completely before slicing.
