  • 3 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 4 cloves fresh garlic
  • 1 medium onion, chopped
  • 2 cups low-sodium beef broth
  • 2 cups Mexican cheese blend
  • 4 slices sourdough bread
  • Fresh cilantro, for garnish
  • Butter, for grilling

Instructions

  1. Preheat oven to 300°F (150°C). Season beef with salt and pepper; sear in a Dutch oven until browned on all sides.
  2. Soak guajillo chiles in hot water for 10 minutes. Blend with garlic, onion, and beef broth until smooth.
  3. Pour marinade over the seared beef and cover tightly. Cook in the oven for about 3 hours until tender.
  4. Shred the beef and mix it back into the juices.
  5. Butter one side of each slice of sourdough. Assemble sandwiches with beef and cheese between buttered bread slices.
  6. Grill in a skillet until golden brown and cheese is melted.
