  • 8 rice paper wrappers
  • 1 cup cold cooked pork, thinly sliced
  • 1 cup lettuce, shredded
  • 1/2 cup carrots, shredded
  • 1/2 cup cucumber, julienned
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp chili paste (optional)

Instructions

  1. Prepare your workspace by gathering ingredients and tools. Fill bowls with warm water for soaking rice paper.
  2. Soak each rice paper wrapper in warm water until soft but still slightly firm.
  3. Lay the softened wrapper flat and layer slices of pork followed by vegetables and herbs in the center.
  4. Fold in the sides of the wrapper and roll tightly from the bottom up.
  5. In a bowl, whisk together peanut butter, soy sauce, lime juice, honey or maple syrup, and chili paste until smooth; add water to adjust consistency if needed.
  6. Serve rolls on a plate with peanut sauce for dipping.
