  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 cup fresh breadcrumbs
  • 2 tbsp curry powder
  • 1 cup full-fat coconut milk
  • 1 tbsp grated fresh ginger
  • 3 cloves garlic, minced
  • ¼ cup chopped cilantro (for garnish)
  • 1 cup low-sodium chicken broth
  • Juice of 1 lime

Instructions

  1. In a large bowl, combine ground meat, breadcrumbs, curry powder, garlic, ginger, salt, and pepper until well mixed.
  2. Form the mixture into small meatballs (about 1 inch in diameter) and place on a lined baking sheet.
  3. Heat oil in a skillet over medium heat; brown meatballs on all sides for about five minutes. Remove and set aside.
  4. In the same skillet, add coconut milk and chicken broth, scraping up browned bits. Stir in lime juice and simmer for five minutes.
  5. Return meatballs to the skillet; simmer together for ten minutes until heated through.
  6. Serve hot, garnished with cilantro.
