  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup whole milk
  • 1/4 cup unsalted butter (melted)
  • 2 tsp instant coffee granules
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
  3. Add eggs, milk, melted butter, instant coffee granules, and vanilla extract to the dry ingredients. Beat until smooth and creamy.
  4. Fill cupcake liners about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  5. Let cupcakes cool in the pan for 5 minutes before transferring to wire racks to cool completely.
  6. While cooling, whip heavy cream until soft peaks form. Gradually add powdered sugar and more instant coffee granules until fluffy.
  7. Once cupcakes are cool, pipe or spread the coffee cream frosting generously on top.
