- 1 tsp vanilla extract
- 1 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake tin with paper liners.
- In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
- Add eggs, milk, melted butter, instant coffee granules, and vanilla extract to the dry ingredients. Beat until smooth and creamy.
- Fill cupcake liners about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
- Let cupcakes cool in the pan for 5 minutes before transferring to wire racks to cool completely.
- While cooling, whip heavy cream until soft peaks form. Gradually add powdered sugar and more instant coffee granules until fluffy.
- Once cupcakes are cool, pipe or spread the coffee cream frosting generously on top.
