- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 1 cup grated Parmesan cheese
- 1 cup long-grain white rice
- 1 cup low-sodium chicken broth
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Prepare your ingredients by chopping the garlic and setting aside the chicken breasts.
- Cook the rice: In a medium saucepan, bring water to boil, add salt, stir in rice, cover, and simmer for 18-20 minutes until fluffy.
