  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz flat rice noodles
  • 1 red bell pepper, sliced
  • 1 cup bean sprouts
  • 4 green onions, sliced
  • 1 cup roasted peanuts, crushed
  • Juice of 2 limes
  • ¼ cup low-sodium soy sauce
  • 2 tbsp tamarind paste
  • 2 tbsp brown sugar
  • 1 tsp chili powder (adjust to taste)

Instructions

  1. Cut chicken breasts into thin strips.
  2. Soak rice noodles in hot water until just soft (5-10 minutes). Drain and set aside.
  3. In a bowl, mix soy sauce, tamarind paste, brown sugar, and chili powder to create the sauce.
  4. Heat oil in a skillet or wok over medium-high heat. Add chicken and cook until golden brown (5-7 minutes).
  5. Add bell peppers and green onions; stir-fry for 2-3 minutes until tender-crisp.
  6. Toss in soaked noodles and sauce; mix until well combined and heated through (about 2 minutes).
  7. Serve hot, garnished with crushed peanuts and lime wedges.
