- 8 oz thin rice noodles
- 4 green onions, chopped
- 2 large eggs
- ½ cup unsalted peanuts, crushed
- 2 tbsp tamarind paste
- ¼ cup low-sodium soy sauce
- 2 tsp Sriracha sauce (adjust to taste)
- 1 tbsp brown sugar
- Oil for cooking
Instructions
- Soak the rice noodles in warm water for about 30 minutes until softened. Chop the chicken into bite-sized pieces.
- In a small bowl, mix tamarind paste, soy sauce, Sriracha, and brown sugar to create the sauce.
- Heat oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through (about 5 minutes).
- Push the chicken to one side of the skillet; crack in eggs and scramble until just set. Mix with chicken.
- Drain noodles and add to the skillet along with the sauce. Toss gently to combine all ingredients.
