  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz thin rice noodles
  • 4 green onions, chopped
  • 2 large eggs
  • ½ cup unsalted peanuts, crushed
  • 2 tbsp tamarind paste
  • ¼ cup low-sodium soy sauce
  • 2 tsp Sriracha sauce (adjust to taste)
  • 1 tbsp brown sugar
  • Oil for cooking

Instructions

  1. Soak the rice noodles in warm water for about 30 minutes until softened. Chop the chicken into bite-sized pieces.
  2. In a small bowl, mix tamarind paste, soy sauce, Sriracha, and brown sugar to create the sauce.
  3. Heat oil in a large skillet over medium heat. Cook chicken until golden brown and cooked through (about 5 minutes).
  4. Push the chicken to one side of the skillet; crack in eggs and scramble until just set. Mix with chicken.
  5. Drain noodles and add to the skillet along with the sauce. Toss gently to combine all ingredients.
  6. Stir in chopped green onions and crushed peanuts before serving. Enjoy with lime wedges!
