  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup unsalted butter, softened
  • 1/4 cup fresh parsley, chopped
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Create pockets in each chicken breast using a sharp knife.
  3. In a bowl, mix the softened butter, minced garlic, chopped parsley, and lemon juice until well combined.
  4. Stuff each chicken pocket with the garlic butter mixture and secure if needed with toothpicks.
  5. In another bowl, mix panko breadcrumbs with olive oil and season with salt.
  6. Coat each stuffed chicken breast in the breadcrumb mixture.
  7. Bake for 25-30 minutes until golden brown and cooked through (165°F/74°C internal temperature).
  8. Serve hot drizzled with any remaining garlic butter.
