- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1/2 cup unsalted butter, softened
- 1 cup panko breadcrumbs
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- Place chicken breasts between plastic wrap and pound to about 1/2 inch thick.
- In a bowl, mix softened butter with minced garlic, parsley, salt, and pepper until well combined.
- Spoon the garlic butter mixture into the center of each chicken breast. Fold sides in and roll tightly.
- Dredge each roll in flour, dip in beaten eggs, then coat with panko breadcrumbs.
- Arrange on a parchment-lined baking sheet and bake for 25-30 minutes or until golden brown.
