  • 4 cloves fresh garlic, minced
  • 1 medium sweet onion, finely chopped
  • 1 tbsp fresh ginger, grated
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 cups canned or fresh tomatoes, diced
  • 2 tsp turmeric
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp garam masala
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh cilantro for garnish

Instructions

  1. Prep your ingredients: Chop onions, garlic, ginger, and tomatoes.
  2. In a large pot over medium heat, add oil and sauté onions until translucent (about 5 minutes).
  3. Stir in minced garlic and grated ginger; cook until fragrant (about 1 minute).
  4. Add spices (turmeric, cumin, coriander) and toast briefly (30 seconds).
  5. Toss in chicken breasts; cook until no longer pink (5-7 minutes).
  6. Pour in tomatoes and coconut milk; simmer uncovered for 20-25 minutes until thickened.
