- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 6 slices thick-cut bacon
- 12 oz rotini or penne pasta
- 1 cup ranch dressing
- 2 cups shredded cheese (1 cup cheddar, 1 cup mozzarella)
- 2 cups fresh spinach
- 1 tsp garlic powder
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and spray a 9×13-inch baking dish with nonstick spray.
- Cook pasta in boiling salted water until al dente (8-10 minutes). Drain and set aside.
- In a large skillet, sauté diced chicken seasoned with salt and pepper over medium heat until browned (5-7 minutes). Remove from skillet.
- Cook chopped bacon in the same skillet until crispy (4-5 minutes).
- In a large bowl, mix cooked pasta, ranch dressing, sautéed chicken, and bacon until well-coated.
- Fold in fresh spinach and half of the cheese mixture.
- Transfer to the prepared baking dish, top with remaining cheese, and bake for 25-30 minutes until bubbly and golden brown.
