  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper. In a large skillet over medium-high heat, melt 1 tablespoon of butter. Cook the chicken for about 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  2. In a pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente (about 8-10 minutes). Drain, reserving half a cup of pasta water.
  3. In the same skillet used for the chicken, melt another tablespoon of butter over medium heat. Add minced garlic and sauté for one minute until fragrant.
  4. Pour in heavy cream while stirring constantly, allowing it to bubble gently. Gradually stir in Parmesan cheese until melted and smooth. If too thick, add reserved pasta water to reach desired consistency.
  5. Slice the rested chicken into strips and toss with the cooked fettuccine in the creamy sauce until well coated.
  6. Serve immediately, garnished with extra Parmesan if desired.
