  • 8 oz spaghetti or penne
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Rinse cherry tomatoes under cool water and pat dry. Slice them in half.
  2. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente (8-10 minutes).
  3. In a large skillet over medium heat, add olive oil. Once shimmering, sauté minced garlic until fragrant (about 30 seconds). Add halved cherry tomatoes and stir gently.
  4. Season with salt and pepper while stirring occasionally. Cook until tomatoes soften and burst (5-7 minutes).
  5. Reserve some pasta water, then drain cooked pasta. Add it to the skillet with tomatoes and toss everything together, using reserved pasta water as needed for creaminess.
  6. Remove from heat, fold in torn basil leaves and grated Parmesan cheese, then let sit for a minute before serving.
