  • 2 lbs russet potatoes (sliced thin)
  • 2 cups heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 4 tbsp unsalted butter
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • Fresh thyme (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice russet potatoes into thin rounds (about 1/8 inch thick).
  3. In a saucepan over medium heat, melt butter. Stir in heavy cream, garlic powder, salt, and pepper until heated but not boiling.
  4. In a greased baking dish, layer half of the potato slices. Pour half of the cheese sauce over them and sprinkle with half the cheese mix.
  5. Repeat layering with remaining potatoes, cheese sauce, and top with remaining cheese.
  6. Cover with foil and bake for about 45 minutes; remove foil and bake for an additional 15-20 minutes until golden brown.
