Ingredients
- 3–4 boneless, skinless chicken breasts (1 lb)
- 2 cloves fresh garlic (minced)
- 8 flour tortillas
- 2 cups shredded Monterey Jack cheese
- 1 cup shredded Cheddar cheese
- 1 can (15 oz) enchilada sauce
- ½ cup sour cream (for garnish)
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
- In a skillet over medium heat, add olive oil. Cook chicken until golden brown on both sides (about 6-7 minutes per side). Season with salt and pepper.
- Remove chicken from heat; let cool slightly before shredding with two forks.
- In the same skillet, cook minced garlic for about one minute. Stir in shredded chicken along with cumin and chili powder.
- Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the baking dish.
