  • 34 boneless, skinless chicken breasts (1 lb)
  • 2 cloves fresh garlic (minced)
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded Cheddar cheese
  • 1 can (15 oz) enchilada sauce
  • ½ cup sour cream (for garnish)
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, add olive oil. Cook chicken until golden brown on both sides (about 6-7 minutes per side). Season with salt and pepper.
  3. Remove chicken from heat; let cool slightly before shredding with two forks.
  4. In the same skillet, cook minced garlic for about one minute. Stir in shredded chicken along with cumin and chili powder.
  5. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the baking dish.
  6. Pour enchilada sauce over the rolled tortillas and sprinkle shredded cheeses on top.
  7. Bake for 20-25 minutes until bubbly and golden. Let cool for five minutes before serving topped with sour cream.
