  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz short pasta (like penne or rotini)
  • 2 cups fresh broccoli florets
  • 2 cups shredded sharp cheddar cheese
  • 1 cup whole milk
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup all-purpose flour
  • 4 tbsp butter

Instructions

  1. Preheat oven to 350°F (175°C). Boil water in a large pot.
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a skillet, melt 1 tbsp butter over medium heat. Season chicken with salt and pepper; sauté until cooked through (about 6 minutes per side). Remove from heat and slice into bite-sized pieces.
  4. In a saucepan, melt the remaining butter; whisk in flour until smooth. Gradually add milk while whisking until thickened. Stir in cheddar cheese until melted.
  5. In a mixing bowl, combine pasta, broccoli, chicken, and cheese sauce; mix well.
  6. Transfer to a greased baking dish, top with additional cheddar if desired, and bake for 25 minutes until bubbly and golden.
