  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp salt
  • 3 large eggs
  • 1 cup grated carrots (about 2 medium-sized carrots)
  • 1/2 cup vegetable oil
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan with butter or nonstick spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, whisk eggs and vegetable oil until smooth. Stir in grated carrots and nuts if using.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  5. Transfer the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
