- 2 tbsp rice vinegar
- ½ fresh cucumber, thinly sliced
- 1 ripe avocado, diced
- ½ cup imitation crab meat, chopped
- 1 nori sheet, cut into strips
- 1 tbsp toasted sesame seeds
- Soy sauce (to taste)
- Sriracha or spicy mayo (to taste)
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Cook according to package instructions using 2 cups of water for every cup of rice. Once cooked, let it cool slightly and mix in the rice vinegar.
- While the rice cools, slice the cucumber and dice the avocado. Chop the imitation crab meat into smaller pieces.
- In serving bowls, add approximately one cup of cooled sushi rice as the base. Layer with cucumber slices, avocado cubes, and chopped crab meat.
- Top each bowl with strips of nori and sprinkle toasted sesame seeds over everything.
- Drizzle with soy sauce or spicy mayo before serving and enjoy immediately.
