  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tbsp taco seasoning
  • Juice of 2 limes
  • ¼ cup fresh cilantro, chopped
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Gather all ingredients and chop garlic and cilantro.
  2. Heat oil in a large skillet over medium heat. Sear chicken breasts for about 4-5 minutes per side until golden brown.
  3. Add chicken broth, soy sauce, lime juice, garlic, and spices to the skillet. Stir well.
  4. Bring to a gentle simmer over medium-low heat, cover, and cook for 30-40 minutes until chicken is tender.
  5. Remove chicken from the skillet and shred using two forks. Return shredded chicken to skillet and stir in chopped cilantro before serving.
