Description

Buttery Honey Pumpkin Cookies are the perfect autumn treat, combining soft, chewy textures with the warm flavors of pumpkin and honey.


Ingredients

  • 1 cup canned pumpkin puree
  • 1/2 cup honey
  • 1/2 cup light brown sugar
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, mix pumpkin puree, honey, brown sugar, and melted butter until smooth.
  4. Gradually combine the dry ingredients into the wet mixture until just blended.
  5. Drop rounded spoonfuls of dough onto prepared baking sheets about two inches apart.
  6. Bake for 12-15 minutes until edges are golden and centers are soft.
  7. Cool on baking sheets for a few minutes before transferring to wire racks.
