Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
- In another bowl, mix pumpkin puree, honey, brown sugar, and melted butter until smooth.
- Gradually combine the dry ingredients into the wet mixture until just blended.
- Drop rounded spoonfuls of dough onto prepared baking sheets about two inches apart.
- Bake for 12-15 minutes until edges are golden and centers are soft.
- Cool on baking sheets for a few minutes before transferring to wire racks.
