  • 4 boneless, skinless chicken breasts
  • 8 oz Boursin cheese
  • 1 cup fresh cranberries
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • ½ cup diced sweet onion
  • 2 tbsp sugar
  • 2 tbsp balsamic vinegar
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Butterfly the chicken breasts to create pockets.
  2. Fill each pocket generously with Boursin cheese. Secure with toothpicks if needed.
  3. In an oven-safe skillet over medium heat, add olive oil and sear the stuffed chicken for about 4-5 minutes per side until golden brown.
  4. Remove chicken and add onions to the skillet, cooking until translucent. Add cranberries, sugar, and balsamic vinegar; stir until cranberries begin to break down.
  5. Return the chicken to the skillet atop the cranberry mixture and bake in the oven for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  6. Let rest briefly before serving, drizzling remaining sauce over the chicken.
