  • 8 oz penne pasta
  • 8 oz Boursin cheese (garlic & herb flavor)
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cook the penne pasta in salted boiling water until al dente according to package instructions. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about one minute until fragrant. Stir in fresh spinach until wilted.
  4. In a large bowl, combine cooked pasta, sautéed spinach, Boursin cheese, heavy cream, and half of the Parmesan cheese. Mix well until fully coated.
  5. Transfer the mixture into the prepared baking dish and sprinkle with remaining Parmesan cheese. Bake for about 25 minutes or until bubbly and golden on top.
