  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 box (3.4 oz) vanilla pudding mix
  • 1 cup semisweet chocolate chips
  • 2 tbsp coconut oil

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream butter and sugar until fluffy. Beat in eggs and vanilla.
  3. In another bowl, whisk flour, baking powder, and salt together. Gradually add to wet mixture until combined.
  4. Drop rounded tablespoons of dough onto prepared sheets.
  5. Bake for about 10 minutes or until edges are golden but centers remain soft. Let cool completely.
  6. Whip heavy cream and pudding mix until thickened; fill half of the cookies and sandwich them together.
  7. Melt chocolate chips with coconut oil; drizzle over assembled cookies.
