  • 1 cup fresh blueberries
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1/3 cup coconut oil or butter (melted)
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1/2 tsp almond extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish or line with parchment paper.
  2. In a large bowl, mix the rolled oats, flour, brown sugar, and salt until combined.
  3. Add melted coconut oil (or butter) and vanilla extract; mix until crumbly.
  4. Fold in fresh blueberries and almond extract gently.
  5. Press half of the oat mixture into the prepared dish for the base layer.
  6. Sprinkle the remaining oat mixture over the blueberries evenly.
  7. Bake for 25-30 minutes, or until golden brown and fragrant.
  8. Allow to cool before cutting into squares.
