  • 2 lbs beef chuck roast
  • 4 dried guajillo chiles
  • 1 medium onion, sliced
  • 4 garlic cloves
  • 1 cup beef broth
  • 2 bay leaves
  • 12 corn tortillas
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Remove stems and seeds from guajillo chiles. Toast in a skillet over medium heat for about 2 minutes until fragrant.
  2. Blend toasted chiles with garlic cloves, onion, and beef broth until smooth.
  3. Place the chuck roast in a slow cooker and pour the blended sauce over it along with bay leaves. Cook on low for 8 hours until fork-tender.
  4. Shred the beef using two forks.
  5. Heat corn tortillas in a skillet until slightly crispy. Fill each tortilla generously with shredded beef.
  6. Serve tacos alongside bowls of consomme for dipping and garnish with chopped cilantro and lime wedges.
