- 2 lbs beef chuck roast
- 4 dried guajillo peppers
- 4 cloves fresh garlic, minced
- 1 large onion, sliced
- 4 cups low-sodium beef broth
- 8 oz ramen noodles
- Fresh cilantro, for garnish
- Lime wedges, for serving
- Sliced radishes, for garnish
Instructions
- Trim excess fat from the beef chuck roast and cut it into large chunks. Season generously with salt and pepper.
- In a dry skillet over medium heat, toast the dried guajillo peppers for 2-3 minutes until fragrant. Cool slightly and remove seeds.
- Blend the toasted peppers with garlic, onion, and 1 cup of beef broth until smooth to form a paste.
- In a large pot over medium-high heat, heat oil and sear the beef chunks until browned on all sides. Add the blended sauce and remaining beef broth; bring to a boil then reduce heat to low.
- Cover and simmer for about 2 hours until the meat is tender and easily shredded with a fork.
- Cook ramen noodles according to package instructions. In serving bowls, layer noodles at the bottom, ladle hot birria broth over them, top with shredded beef and garnishes.
