  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1 medium onion, chopped
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 tbsp vegetable oil (for frying)

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Add chopped onions halfway through until translucent.
  2. Stir in cumin, paprika, chili powder, salt, and pepper. Mix in the shredded cheese until melted.
  3. Spoon about two tablespoons of filling onto one edge of each tortilla and roll tightly.
  4. Heat vegetable oil in a frying pan over medium-high heat. Fry rolled taquitos seam-side down until golden brown (about three minutes per side).
