  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 medium red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 6 cups mixed lettuce (romaine and spinach)
  • 3 tbsp olive oil
  • 1 cup BBQ sauce

Instructions

  1. Cut chicken breasts into bite-sized pieces and marinate in a mixture of olive oil, BBQ sauce, salt, pepper, and garlic powder for at least 30 minutes.
  2. Chop bell peppers and red onion; rinse cherry tomatoes.
  3. Assemble skewers by alternating chicken and vegetables.
  4. Preheat grill to medium-high heat (400°F) and grill skewers for 10-12 minutes until charred on all sides.
  5. Wash and dry lettuce mix; arrange it on plates.
