  • 4 ripe bananas (sliced)
  • 1 cup brown sugar
  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup whole milk
  • 1 tsp cinnamon
  • 2 tbsp dark rum (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix sliced bananas with brown sugar and cinnamon; add rum if desired.
  3. In another bowl, whisk together flour, baking powder, and salt. Combine melted butter and milk in a separate bowl, then mix into the dry ingredients until just combined.
  4. Pour half of the batter into the baking dish, layer half of the banana mixture on top, then add the remaining batter and finish with the rest of the bananas.
  5. Bake for 30-40 minutes until golden brown and bubbly around the edges.
  6. Allow to cool slightly before serving warm with ice cream.
