  • 8 oz elbow macaroni
  • 1 cup sharp cheddar cheese, shredded
  • 8 oz fresh mushrooms, sliced (button or cremini)
  • 2 tbsp balsamic vinegar
  • 1 large onion, thinly sliced
  • 2 tbsp butter
  • 1 cup whole milk
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Cook the elbow macaroni in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, melt the butter. Add sliced onions and sauté for about 10 minutes until softened and translucent.
  3. Add sliced mushrooms to the skillet and cook for an additional 5-7 minutes until tender.
  4. Drizzle balsamic vinegar over the onion-mushroom mixture and simmer for two minutes.
  5. In a saucepan, melt more butter over medium heat. Whisk in flour until smooth, then gradually add whole milk while whisking until thickened (about five minutes). Stir in shredded cheddar until melted.
  6. Combine cooked pasta with the onion-mushroom mix and pour over the cheese sauce. Mix well and transfer to a greased baking dish if desired.
