  • 1 lb white fish fillets (cod or tilapia)
  • 2 tsp taco seasoning
  • 2 tbsp olive oil
  • 2 cups cooked cilantro lime rice
  • 1 cup pico de gallo
  • 2 cups shredded cabbage
  • ½ cup lime crema (made from ½ cup sour cream + juice of 1 lime)
  • 1 avocado, sliced

Instructions

  1. Cook cilantro lime rice according to package instructions. Stir in lime juice and chopped cilantro once cooked.
  2. Coat fish fillets with olive oil and taco seasoning.
  3. Preheat oven to 400°F (200°C). Bake fish on a parchment-lined baking sheet for 15-20 minutes until flaky.
  4. In serving bowls, layer cilantro lime rice, flaked fish, shredded cabbage, pico de gallo, sliced avocado, and drizzle with lime crema.
