  • 4 thick-cut bone-in pork chops (1-inch thick)
  • 4 slices bacon
  • 8 oz fresh button or cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium-high heat with olive oil.
  2. Season both sides of the pork chops generously with salt and pepper. Sear in the hot skillet for about 4–5 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, cook the bacon until crispy. Remove excess grease but leave about 1 tablespoon in the pan.
  4. Add onions and mushrooms; sauté until softened (about 5 minutes). Stir in minced garlic for the last minute.
  5. Return pork chops to the skillet and pour in chicken broth. Simmer for about 10 minutes until fully cooked.
  6. Serve with mushroom-bacon mixture piled on top.
