  • 6 slices thick-cut bacon, chopped
  • 2 medium leeks, cleaned and sliced
  • 4 cups stale French bread, cubed
  • 1 cup low-sodium vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 medium yellow onion, diced
  • 4 tbsp unsalted butter

Instructions

  1. In a large skillet over medium heat, cook the bacon until crispy. Remove excess fat but reserve some drippings. Add leeks and onions; sauté until soft.
  2. In a mixing bowl, combine sautéed mixture with bread cubes and herbs.
  3. Gradually mix in vegetable broth until bread cubes are moist but not soggy.
  4. Transfer to a greased baking dish and bake at 350°F (175°C) for 25-30 minutes or until golden brown on top.
