  • 2 slices sourdough bread
  • 2 slices thick-cut bacon
  • 2 large eggs
  • 1/2 ripe avocado, sliced
  • 1/2 cup sharp cheddar cheese, shredded
  • 1 tbsp butter

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy (about 5-7 minutes). Remove and drain on paper towels.
  2. In the same skillet, crack the eggs into the leftover bacon fat. Season with salt and pepper, then scramble until fluffy (about 3 minutes).
  3. Butter one side of each slice of bread generously.
  4. On the unbuttered side of one slice, layer cooked bacon, scrambled eggs, avocado slices, and shredded cheese. Top with the second slice of bread, buttered side facing out.
  5. Grill in the skillet over medium heat until golden brown on both sides and cheese melts (about 3-4 minutes per side).
