  • 4 large flour tortillas
  • 3 medium Granny Smith or Honeycrisp apples, peeled and sliced (about 3 cups)
  • 2 tsp ground cinnamon
  • 1/2 cup light brown sugar
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/4 cup water (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a bowl, toss sliced apples with brown sugar, cinnamon, and vanilla until fully coated.
  3. Place a portion of the apple mixture in each tortilla, roll tightly, and place seam-side down in the baking dish.
  4. Brush melted butter over the enchiladas and bake for 25-30 minutes until golden brown.
