  • 1 cup diced fresh apples (Honeycrisp or Fuji)
  • 1/2 cup dried cranberries (unsweetened)
  • 1/2 cup panko breadcrumbs
  • 1 large egg (room temperature)
  • 1/4 cup chopped fresh parsley
  • 1 tsp dried thyme
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, sauté diced onion and minced garlic until softened, about 3–5 minutes.
  3. In a large bowl, combine ground turkey, sautéed onion and garlic, chopped apples, dried cranberries, panko breadcrumbs, egg, parsley, thyme, salt, and pepper. Mix gently but thoroughly.
  4. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
  5. Bake for 20–25 minutes until golden brown and cooked through (internal temperature of 165°F or 74°C).
  6. Serve warm or allow to cool for meal prep.
