- 2 cups diced fresh apples (Granny Smith preferred)
- 2 large eggs
- 1/2 cup milk
- 1/2 cup melted butter
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- In another bowl, beat eggs and mix with melted butter and milk until well combined.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the diced apples.
- For the streusel topping, mix together 1/4 cup flour, 1/4 cup sugar, 2 tbsp melted butter, and 1 tsp cinnamon until crumbly. Sprinkle on top of each muffin before baking.
- Bake for about 20-25 minutes or until golden brown. Allow to cool slightly before serving.
