  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon

  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 2 cups fresh apples, peeled and diced (Granny Smith recommended)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan with nonstick spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat eggs and melted butter until frothy; fold in diced apples.
  4. Combine wet and dry ingredients gently until just mixed—avoid overmixing!
  5. Pour the batter into the prepared loaf pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. Let cool for 10 minutes in the pan before transferring to a wire rack. Slice and serve warm or at room temperature.
