Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 3 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 tablespoons ice water
  • 1 cup heavy cream, chilled
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly.
  2. Gradually add ice water until the dough holds together. Form into a ball and roll out on a floured surface.
  3. Transfer dough to a greased tart pan, pressing gently into place. Poke holes in the bottom.
  4. Blind bake for 15 minutes until golden brown. Let cool.
  5. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  6. Spread cream filling into cooled crust and top with strawberries and blueberries.
  7. Chill before serving.
