  • 1 ½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup maple syrup
  • ½ cup plant-based milk (almond or oat)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and set aside.
  3. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  4. In another bowl, mix shredded zucchini with maple syrup, plant-based milk, and vanilla until combined.
  5. Fold wet ingredients into dry ingredients until just mixed.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Cool before slicing.
